In each of the fifth and seventh plagues, it is the cattle and any other livestock that are '''in the field,''' that are destroyed.  Those that are not in the field would not be destroyed.  That this is true is emphasized in the description of the seventh plague where we read, "He that feared the word of Jehovah among the servants of Pharaoh made his servants and his cattle flee into the houses:  and he that regarded not the word of Jehovah left his servants and his cattle in the field."

It is only those horses, cattle, and other livestock that are in the field that are destroyed.  Those that are brought into shelter, barns or houses, escaped the plague.  When we see that Pharaoh had horses and chariots to chase after the Israelites in chapter 14, then either Pharaoh's horses were brought in from the field during the earlier plagues or Pharaoh could have taken horses from those who had protected their horses.
